What Is Dalgona Coffee?

Dalgona coffee is a whipped coffee drink that went viral in early 2020 and traces its roots to Korean cafe culture. The concept is simple: equal parts instant coffee, sugar, and hot water are whipped vigorously until they form a thick, pale, mousse-like foam. This cloud of whipped coffee sits on top of a glass of cold milk, creating a visually striking two-tone drink. The name comes from dalgona, a Korean honeycomb toffee that the whipped coffee's caramel colour resembles.

How to Make It

The recipe is deceptively simple. Combine two tablespoons each of instant coffee, granulated sugar, and hot water in a bowl. Whisk vigorously until the mixture turns from dark brown liquid to a thick, pale caramel-coloured foam that holds stiff peaks. This takes about two minutes with an electric whisk or frother, or about fifteen minutes by hand with a regular whisk (an arm workout, but technically possible). Spoon the foam over a glass of cold milk and ice. Stir before drinking to combine.

The Coffee Matters

Not all instant coffee works equally well for dalgona. You need a proper spray-dried instant coffee — the granulated kind, not freeze-dried or micro-ground. The whipped coffee mixture can be made in advance and stored in the fridge for up to a day — it deflates slightly but re-whips easily.

Why It Works

The science behind dalgona coffee is straightforward. The sugar stabilises the air bubbles created by whipping, while the coffee's natural surfactants (compounds that reduce surface tension) help the foam form in the first place. This is why it must be instant coffee — brewed coffee does not contain the same concentration of these compounds and will not whip properly. It is also why the sugar is essential and cannot be omitted, despite what some low-sugar recipe attempts might suggest.
